Rice Krispies Fruit Treats

Description

These Treats are packed with dried fruit, nuts, and coconut. A simple no-bake recipe that’s crunchy, sweet, and perfect for sharing.


Ingredients

Units Scale
  • 1/4 cup shredded coconut (for lining)
  • 420 g white marshmallows, halved
  • 15 large soft prunes, quartered
  • 15 large soft apricots, quartered
  • 1/4 cup raw sunflower kernels
  • 1/4 cup dried cranberries
  • 1/4 cup dried blueberries
  • 1/4 cup slivered almonds
  • 1/4 cup crushed pecans
  • 4-5 cups Rice Krispies (start with 4, add more if the mix feels too wet)

Optional Toppings:

  • 1/2-3/4 cup shredded coconut
  • 150 g chocolate curls

Instructions

  1. Line a 9×13-inch pan with tinfoil.  Feel free to add some spray or spread with butter, or add parchment.
  2. Sprinkle ¼ cup of coconut over the base.
  3. Chop dried fruit and mix with nuts and seeds. Lightly oil scissors to prevent fruit from sticking when cutting it into smaller pieces.
  4. Microwave marshmallows in a large bowl for 1–1½ minutes until puffed and soft.
  5. Stir in Rice Krispies (starting with 4 cups) and fruit-nut mix. Add more cereal if needed.
  6. Spoon mixture into the pan. Dampen hands and press down evenly.
  7. Sprinkle with extra coconut/chocolate, press gently.
  8. Refrigerate overnight until firm. Cut into squares. Roll sticky sides in loose coconut if needed.
  9. Storage: Keep in an airtight container in the fridge for up to 5 days.
