Description
This roasted avocado is warm, creamy on the inside, and lightly crisp on top. It’s one of those throw-it-together sides that somehow feels a bit special without trying too hard.

- 1 ripe avocado per 2 people, halved and pit removed
- 1 to 2 tsp olive oil
- 1/4 tsp paprika
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a small baking tray with parchment paper so nothing sticks.
- Cut 1 ripe avocado per 2 people in half and remove the pit carefully.
- If the skin wobbles, just slice a tiny bit off the bottom so it sits flat.
- Place the avocado halves cut-side up on the tray, then brush each half with 1 to 2 tsp olive oil, making sure the surface is lightly coated.
- Season each half with 1/4 tsp paprika, plus salt and black pepper to taste. Don’t overdo it, avocado likes a gentle hand.
- Roast in the oven for 10 minutes, until the edges look soft and slightly glossy.
- Switch the oven to grill or broil and toast the avocados for 1 to 2 minutes, just until the tops pick up a warm, golden color.
- Let them cool for a minute or two, then serve warm.
