Description

This roasted avocado is warm, creamy on the inside, and lightly crisp on top. It’s one of those throw-it-together sides that somehow feels a bit special without trying too hard.


Ingredients

Scale
  • 1 ripe avocado per 2 people, halved and pit removed
  • 1 to 2 tsp olive oil
  • 1/4 tsp paprika
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a small baking tray with parchment paper so nothing sticks.
  2. Cut 1 ripe avocado per 2 people in half and remove the pit carefully.
  3. If the skin wobbles, just slice a tiny bit off the bottom so it sits flat.
  4. Place the avocado halves cut-side up on the tray, then brush each half with 1 to 2 tsp olive oil, making sure the surface is lightly coated.
  5. Season each half with 1/4 tsp paprika, plus salt and black pepper to taste. Don’t overdo it, avocado likes a gentle hand.
  6. Roast in the oven for 10 minutes, until the edges look soft and slightly glossy.
  7. Switch the oven to grill or broil and toast the avocados for 1 to 2 minutes, just until the tops pick up a warm, golden color.
  8. Let them cool for a minute or two, then serve warm.
