Description

Crunchy, cheesy, and loaded with roasted veggies and sausage. How do you like your pizza?


Ingredients

Veggies & Sausage

  • 1 cup cherry tomatoes, halved
  • 5-6 crimini mushrooms, cut into eighths (about 2 cups)
  • 1 tablespoon + 1 teaspoon olive oil (plus a little extra for drizzling)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 10 cloves garlic, unpeeled
  • 3/4 pound mild Italian sausage (no casing)

Bread & Toppings

  • 1 loaf French bread, sliced in half lengthwise
  • 1 peeled garlic clove (for rubbing)
  • Pizza sauce (see below)
  • 2 cups shredded mozzarella
  • Herb cheese blend (see below)

Quick Pizza Sauce

Warm everything together in a small saucepan.

Herb Cheese Mix

  • 1/2 cup grated Parmesan
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon dried oregano

Mix and set aside.


Instructions

  1. Toss tomatoes and mushrooms with 1 tablespoon olive oil, salt, pepper, and oregano in a bowl.
  2. Let them sit for 20 minutes.
  3. Preheat oven to 375°F/ 180°C.
  4. Coat the unpeeled garlic with 1 teaspoon olive oil, sprinkle a bit of salt, and roast on a baking sheet for 10 minutes.
  5. Add the marinated veggies to the same pan.
  6. Roast everything for another 10 minutes until soft.
  7. While the veggies roast, cook the sausage in a pan until browned and fully cooked. Set aside.
  8. Place the French bread halves on a baking sheet, drizzle with olive oil, and toast in the oven for 5 minutes.
  9. Pull them out and rub the surface with the peeled garlic clove.
  10. Spread sauce on each bread half.
  11. Sprinkle 1 cup of mozzarella on each.
  12. Add the sausage and roasted veggies evenly.
  13. Bake for 10–12 minutes, or until cheese is melty.
  14. Sprinkle the herb cheese blend over the top.
  15. Bake for another 2–3 minutes until the Parmesan just begins to melt.

Time to Eat

Slice it up and serve hot. It’s crispy, cheesy, savory, and packed with roasted flavor. Total comfort food, no delivery required.
