Crunchy, cheesy, and loaded with roasted veggies and sausage. How do you like your pizza?

Veggies & Sausage
- 1 cup cherry tomatoes, halved
- 5-6 crimini mushrooms, cut into eighths (about 2 cups)
- 1 tablespoon + 1 teaspoon olive oil (plus a little extra for drizzling)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon dried oregano
- 10 cloves garlic, unpeeled
- 3/4 pound mild Italian sausage (no casing)
Bread & Toppings
- 1 loaf French bread, sliced in half lengthwise
- 1 peeled garlic clove (for rubbing)
- Pizza sauce (see below)
- 2 cups shredded mozzarella
- Herb cheese blend (see below)
Quick Pizza Sauce
- 1 (8 oz) can tomato sauce
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
Warm everything together in a small saucepan.
Herb Cheese Mix
- 1/2 cup grated Parmesan
- 2 tablespoons chopped fresh parsley
- 1 teaspoon dried oregano
Mix and set aside.
Instructions
- Toss tomatoes and mushrooms with 1 tablespoon olive oil, salt, pepper, and oregano in a bowl.
- Let them sit for 20 minutes.
- Preheat oven to 375°F/ 180°C.
- Coat the unpeeled garlic with 1 teaspoon olive oil, sprinkle a bit of salt, and roast on a baking sheet for 10 minutes.
- Add the marinated veggies to the same pan.
- Roast everything for another 10 minutes until soft.
- While the veggies roast, cook the sausage in a pan until browned and fully cooked. Set aside.
- Place the French bread halves on a baking sheet, drizzle with olive oil, and toast in the oven for 5 minutes.
- Pull them out and rub the surface with the peeled garlic clove.
- Spread sauce on each bread half.
- Sprinkle 1 cup of mozzarella on each.
- Add the sausage and roasted veggies evenly.
- Bake for 10–12 minutes, or until cheese is melty.
- Sprinkle the herb cheese blend over the top.
- Bake for another 2–3 minutes until the Parmesan just begins to melt.
