Description

Bringing families together, one bowl at a time, with this Savory Lentils and Rice dish


Ingredients

Units Scale
  • 1/2 cup Uncooked Lentils
  • 1 cup Rice
  • 2 cups Water
  • Generous pinch of salt
  • 1 thinly sliced Onion
  • 1 thinly sliced green pepper
  • 2 units of chopped Garlic
  • 2 tsp. Medium-strength curry paste
  • Preserved lemon 1 slice

Instructions

  1. Soak the lentils for at least 10 hours.
  2. Place the soaked lentils and rice into a pot, add water and a generous pinch of salt, and cook, covered, on medium heat until water has been absorbed.
  3. Stir occasionally.
  4. In a heated pan, sautΓ© onion, green pepper, and garlic until tender.
  5. Add the curry paste and lemon slice.
  6. When the rice is tender, add the mix from the pan and blend it all.
  7. Serve as a side dish, or with cooked chopped chicken and serve in a bowl as a complete meal.
