Description
Bringing families together, one bowl at a time, with this Savory Lentils and Rice dish
Ingredients
- 1/2 cup Uncooked Lentils
- 1 cup Rice
- 2 cups Water
- Generous pinch of salt
- 1 thinly sliced Onion
- 1 thinly sliced green pepper
- 2 units of chopped Garlic
- 2 tsp. Medium-strength curry paste
- Preserved lemon 1 slice
Instructions
- Soak the lentils for at least 10 hours.
- Place the soaked lentils and rice into a pot, add water and a generous pinch of salt, and cook, covered, on medium heat until water has been absorbed.
- Stir occasionally.
- In a heated pan, sauté onion, green pepper, and garlic until tender.
- Add the curry paste and lemon slice.
- When the rice is tender, add the mix from the pan and blend it all.
- Serve as a side dish, or with cooked chopped chicken and serve in a bowl as a complete meal.
