Description
Smörgåstårta is a Swedish classic that looks fancy but is simple to prepare. This version with chicken filling and cucumber ribbons is fresh and beautiful.

- 2 boneless chicken breasts
- 1 medium carrot, chopped
- 1 medium onion, finely chopped
- 1 cup mayo
- 1 hard-boiled egg, chopped
- Salt + white pepper, to taste
- 1 cucumber (for ribbons + balls)
- 1 carrot (for garnish)
- Mint or dill sprigs
- 5 slices of white bread, crusts removed
Instructions
- Boil chicken in 2 cups of water until tender. Cool, chop finely.
- Blend carrot + onion. Mix with mayo, chicken, and egg. Season, chill 15 mins.
- Peel cucumber ribbons (save 4). Scoop cucumber balls.
- Shape carrot garnish.
- Stack bread, spreading filling between slices and on top/sides.
- Decorate with cucumber ribbons, cucumber balls, and carrot flowers.
- Garnish with dill/mint.
- Chill 30 minutes before slicing, or the cake may fall apart.
