Description

Smörgåstårta is a Swedish classic that looks fancy but is simple to prepare. This version with chicken filling and cucumber ribbons is fresh and beautiful.


Ingredients

Units Scale
  • 2 boneless chicken breasts
  • 1 medium carrot, chopped
  • 1 medium onion, finely chopped
  • 1 cup mayo
  • 1 hard-boiled egg, chopped
  • Salt + white pepper, to taste
  • 1 cucumber (for ribbons + balls)
  • 1 carrot (for garnish)
  • Mint or dill sprigs
  • 5 slices of white bread, crusts removed

Instructions

  1. Boil chicken in 2 cups of water until tender. Cool, chop finely.
  2. Blend carrot + onion. Mix with mayo, chicken, and egg. Season, chill 15 mins.
  3. Peel cucumber ribbons (save 4). Scoop cucumber balls.
  4. Shape carrot garnish.
  5. Stack bread, spreading filling between slices and on top/sides.
  6. Decorate with cucumber ribbons, cucumber balls, and carrot flowers.
  7. Garnish with dill/mint.
  8. Chill 30 minutes before slicing, or the cake may fall apart.
