South African Malva Pudding

Description

**For the pudding, feel free to use up to 1 cup of sugar if you prefer it sweeter.


Ingredients

Pudding

  • 1/2 cup + 1 tablespoon castor sugar
  • 1 egg
  • 1 tbsp. apricot jam
  • 1 1/4 cup flour
  • 1/2 tsp baking powder
  • Pinch salt
  • 1/2 tsp bicarb of soda
  • 1 tbsp. vinegar
  • 2 tbsp. butter
  • 125 ml milk

Sauce

  • 250 ml fresh cream
  • 125 g butter
  • 125 ml water or orange juice
  • 125 g sugar

Instructions

Preheat the oven to 190C / 375F

Pudding

  1. Beat the sugar and egg until fluffy.
  2. Add and beat in jam into the above mixture.
  3. Sift dry ingredients in a separate bowl.
  4. Melt butter in a pot on medium heat
  5. Add vinegar and milk.
  6. Now add the butter mixture and the egg mixture to the dry ingredients and combine well.
  7. Pour into a well-greased baking tin.
  8. Bake for 25 minutes or until the top is a lovely brown color.

Sauce

  1. Melt the butter in a large saucepan.
  2. Add sugar, cream, and water and mix well and keep aside.
  3. Have the sauce ready, as soon as you’ve taken the pudding out of the oven, you need to pour the sauce over the pudding.
  4. Use all the sauce, it will seep into the baked pudding.
  5. Enjoy with ice cream or custard or both.
  6. Decorate with nuts, some fruit, or whatever you prefer.
