Ingredients

  • 1 cup white sugar
  • 1 cup soy sauce
  • 1 cup water
  • 1/4 cup minced garlic
  • 1/4 cup minced fresh ginger
  • 1 whole 2kg chicken with skin
  • 1/2 tsp five-spice powder
  • 1/4 tsp ginger powder
  • 2 tbsp dark soy sauce
  • 1/4 cup chopped green onions

Instructions

  1. Rub the dark soy sauce over the chicken to coat.
  2. Sprinkle 5 spices and ginger powder inside the chicken.
  3. Combine sugar, soy sauce, water, garlic, and ginger in a large stockpot; stir until sugar is dissolved. Bring to a boil.
  4. Place chicken in the pot skin side down and boil, turn chicken in pot every 5 minutes.
  5. Boil chicken until no longer pink at the bone and juices run clear, about 20 minutes.
  6. Turn off heat and leave the chicken in the pot covered for another 30 minutes turning every 10 minutes.
  7. The sauce mixture will turn into a rich, brown glaze. Remove pot from heat and let cool for 10 minutes.
  8. Cut into bite-sized pieces.
  9. Place chicken on a platter and sprinkle with chopped green onions.
