Description
This Spinach and Mushroom Pie is vegetarian food par excellence, with delicious mushrooms and wilted spinach, and cream cheese.

- 500g Spinach
- 500g Mushrooms
- 1 Onion
- 2-3 Cloves Garlic
- 3-4 Tbsp. Butter
- 2-3 Tbsp. Oil
- Salt & Pepper to taste
- 1 Tsp. Chilli Flakes
- 1 Tub Cream Cheese
- 1 cup Grated Parmesan
- Puff Pastry (store-bought)
Instructions
- Heat butter and oil in a large pan.
- Sauté the onion and garlic till soft.
- Add in the mushrooms and spinach.
- Season and cook till the excess moisture have cooked out.
- Set aside to cool.
- Roll out puff pastry and line the baking pan.
- Spread a layer of cream cheese on the base of the pastry, spoon over the spinach mixture then sprinkle the cheese over.
- Lay the second sheet of pastry over the top, seal, crimp, egg-wash, and bake at 180 for 45-50 minutes or until golden brown.
- Allow cooling slightly before slicing.
- Serve and enjoy!!
