Description

This Spinach and Mushroom Pie is vegetarian food par excellence, with delicious mushrooms and wilted spinach, and cream cheese.


Ingredients

Units Scale
  • 500g Spinach
  • 500g Mushrooms
  • 1 Onion
  • 23 Cloves Garlic
  • 34 Tbsp. Butter
  • 23 Tbsp. Oil
  • Salt & Pepper to taste
  • 1 Tsp. Chilli Flakes
  • 1 Tub Cream Cheese
  • 1 cup Grated Parmesan
  • Puff Pastry (store-bought)

Instructions

  1. Heat butter and oil in a large pan.
  2. Sauté the onion and garlic till soft.
  3. Add in the mushrooms and spinach.
  4. Season and cook till the excess moisture have cooked out.
  5. Set aside to cool.
  6. Roll out puff pastry and line the baking pan.
  7. Spread a layer of cream cheese on the base of the pastry, spoon over the spinach mixture then sprinkle the cheese over.
  8. Lay the second sheet of pastry over the top, seal, crimp, egg-wash, and bake at 180 for 45-50 minutes or until golden brown.
  9. Allow cooling slightly before slicing.
  10. Serve and enjoy!!
