Description
Stir-Fry Bacon and Brussels Sprouts are awesome as a side dish because they are savory, flavorful, and easy to make. The bacon adds a great depth of flavor to the Brussels Sprouts, while the vegetables themselves provide a great crunch. The combination of the two ingredients makes for a delicious, simple, and nutritious veggie that goes well with many different main dishes.

- 4–5 slices of bacon
- 24 Brussel Sprouts
- 1/2 tsp dried rosemary
- 1–2 tsp sliced coconut shavings
Instructions
- Chop bacon into small slices and fry in skillet until crispy, but NOT dry.
- Clean and slice the Brussel Sprouts in half and add rosemary.
- Fry the Brussel Sprouts in the same skillet as the bacon.
- Remove and microwave for 2-3 minutes or until semi-tender, but still crisp.
- Fry the coconut shavings in the bacon fat. If required, add a smidgen of VOO.
- Be cautious as they tend to burn easily.
- Return to the skillet and continue to fry until tender to your liking.
- Spoon bacon and Brussels sprouts in a warm serving dish and garnish with the coconut.
- Serve immediately.
