Stir-Fry Bacon and Brussels Sprouts

An easy, quick, and healthy Stir-Fry Bacon and Brussels Sprouts as a green side dish for Thanksgiving. Very enjoyable indeed.

The Brussels sprout is a member of the Gemmifera cultivar group of cabbages, grown for its edible buds. The leaf vegetables are typically 1.5–4.0 cm in diameter and resemble miniature cabbages. The Brussels sprout has long been popular in Brussels, Belgium, from which it gained its name.

Description

Stir-Fry Bacon and Brussels Sprouts are awesome as a side dish because they are savory, flavorful, and easy to make. The bacon adds a great depth of flavor to the Brussels Sprouts, while the vegetables themselves provide a great crunch. The combination of the two ingredients makes for a delicious, simple, and nutritious veggie that goes well with many different main dishes.


Ingredients

  • 4-5 slices of bacon
  • 24 Brussel Sprouts
  • 1/2 tsp dried rosemary
  • 1-2 tsp sliced coconut shavings

Instructions

  1. Chop bacon into small slices and fry in skillet until crispy, but NOT dry.
  2. Clean and slice the Brussel Sprouts in half and add rosemary.
  3. Fry the Brussel Sprouts in the same skillet as the bacon.
  4. Remove and microwave for 2-3 minutes or until semi-tender, but still crisp.
  5. Fry the coconut shavings in the bacon fat. If required, add a smidgen of VOO.
  6. Be cautious as they tend to burn easily.
  7. Return to the skillet and continue to fry until tender to your liking.
  8. Spoon bacon and Brussels sprouts in a warm serving dish and garnish with the coconut.
  9. Serve immediately.
