Description

A delicious and homey Sunday Lunch Roast Sirloin Pork. Today was a typical Sunday lunch of roast Sirloin Pork, roast potatoes, and sweet pumpkin.


Ingredients

Units Scale

Pork

  • 1.5kg sirloin pork roast
  • 1 onion quartered
  • 2 sliced garlic cloves

Rub

  • 1/2 tsp 5 spice powder
  • 1/4 tsp fennel powder
  • 1 tsp salt
  • 1/2 tsp white pepper
  • 1/4 tsp sage
  • 1/4 tsp ginger powder

Roast Potatoes

Sweet Pumpkin

  • 4 cups diced pumpkin
  • 2 pieces stick cinnamon
  • 2 tbsp brown sugar
  • 3 tbsp. butter
  • A sprinkle of cinnamon powder
  • A sprinkle of white pepper

Instructions

Meat

  1. Make slits in pork and add garlic slivers.
  2. Rub the emulsified mixture into flesh only.
  3. Brush top with vinegar and sprinkle with coarse salt and drizzle with oil.
  4. Place in the baking tray with a quartered onion and 1 cup chicken stock and place in preheated oven at 200 degrees and bake for 45 minutes.
  5. Remove pork and place pan on the stove.
  6. I thickened with Bisto gravy.

Rub

  1. Add just enough oil to emulsify all ingredients together.

Roast Potatoes

  1. Parbarloiled till tender, drain in a colander.
  2. Add the rest of the ingredients, and shake to coat.
  3. Halfway through pork is cooking add oil to a baking dish and add to lower rack to heat.
  4. Once heated, remove and add potatoes to the lower rack.
  5. Once the pork is done, remove pork to rest, turn potatoes and move to the top rack to brown.

Sweet Pumpkin

  1. Place in a glass bowl.
  2. Cover with cling film (pierced).
  3. Microwave on high for 5 minutes.
  4. Remove the cling film and give it a stir.
  5. Microwave another 3 minutes.
