Sweet and Tangy Royco BBQ Chicken sizzles with mango juice, chutney, and Royco’s sweet-sour blend. Every bite is glazed with that sticky, finger-licking sauce everyone loves

- 1 packet Royco Sweet & Sour Marinade
- 1 kg chicken pieces (thighs, drumsticks, or mixed)
- 750 ml mango juice
- 4 tablespoons lemon juice
- 4 tablespoons chutney (any fruity one works great!)
- 4 tablespoons tomato sauce
- A few sprigs of fresh thyme
- Chicken spice (to season)
- Salt & pepper, to taste
Instructions
- Clean 1 kg chicken pieces, then season with chicken spice, a pinch of salt, and pepper. Let it rest while you prep the sauce.
- In a saucepan, mix 1 packet Royco Sweet & Sour Marinade, 750 ml mango juice, 4 tbsp lemon juice, 4 tbsp chutney, and 4 tbsp tomato sauce. Stir it all together, bring it to a gentle boil, then let it simmer for about 10 minutes on medium heat.
- Place the seasoned chicken over medium coals (or on your stovetop grill if you’re indoors).
- Cook until it’s golden brown and fully done, turning every few minutes so it doesn’t burn.
- Brush the chicken with the hot marinade and grill for another 2 minutes per side. That sticky glaze is what makes it irresistible.
- Once cooked, place the chicken in a pot or dish, pour the leftover sauce over it, and sprinkle with fresh thyme for that herby touch.
- Serve hot with rice, salad, or roasted veggies, and maybe an extra drizzle of that sauce if you’re like me and can’t get enough!
