Want to impress at your next gathering? Sweet Potato & Spinach Pie does the trick every time.

- 3 eggs
- 6 1/3 oz all-purpose flour (187 grams)
- 7 oz sweet potato (198 grams)
- 3.5 oz fresh spinach, washed and ready (100 grams)
- 3 oz hard cheese, your favorite kind works (85 grams)
- 1/2 cup (minus 1 Tbsp) milk (115 ml)
- 1/2 cup (minus 1 Tbsp) olive oil (115 ml)
- Pinch of salt
- 1 tsp coriander powder (5 ml)
- 2 tsp baking powder (10 ml)
Instructions
- Peel the sweet potato and give it a good, coarse grate.
- Chop up that fresh spinach. No need to be fancy, just a rough chop will do.
- Grate your cheese nice and thin.
- In a mixing bowl, whisk together the eggs and flour until smooth.
- Stir in the olive oil, then the milk. It should start to look like a smooth batter.
- Toss in the sweet potato, spinach, and cheese, and give it a good mix.
- Season with a pinch of salt, coriander, and baking powder, and fold it all together.
- Pour the batter into a greased rectangular cake pan (about 8” x 3” works great).
- Bake at 250°C/480°F for 50 minutes.
- Let it cool before popping it out of the pan and slicing.
