Ingredients
Taco Meat Filling
- 500g Minced Beef
- 1 Can Black Beans (drained)
- 1 cup Corn
- 1 Onion (diced)
- a pinch of Salt to taste
- 1/4 cup of Grated Cheese
- 1/4 cup of Sour Cream
- Taco Seasoning (to taste)
Taco Seasoning
- 2 Tablespoons Chilli Powder
- 1 Tablespoon Garlic Powder
- 1 Tablespoon Onion Powder
- 1 Tablespoon Dried Oregano
- 2 Tablespoon Paprika
- 1 Tablespoon Ground Cumin
- 2 Teaspoons Salt
- 2 Teaspoons Black Pepper
Instructions
Taco Meat Filling
- Brown meat in a dry pan.
- Add onion and taco seasoning to the meat and allow to cook for a few minutes.
- Once the onion had softened, add in the corn and beans.
- Stir well and set aside.
- Cut the sweet potato in half.
- Rub each half with oil.
- Place in the air fryer or on a baking sheet in the oven and roast till fork tender.
- Allow to cool, scoop out some of the flesh and mix with the meat filling.
- Fill it back into the potato skins, and top with grated cheese and sour cream. Enjoy!!
The meat was seasoned with my homemade taco seasoning blend.
Taco Seasoning
- Combine all seasonings together and store them in an airtight jar.
- Add seasoning to the meat while browning.
- Build your salad according to your usual/favorite taco toppings and enjoy!!
