Ingredients

Taco Meat Filling

  • 500g Minced Beef
  • 1 Can Black Beans (drained)
  • 1 cup Corn
  • 1 Onion (diced)
  • a pinch of Salt to taste
  • 1/4 cup of Grated Cheese
  • 1/4 cup of Sour Cream
  • Taco Seasoning (to taste)

Instructions

Taco Meat Filling

  1. Brown meat in a dry pan.
  2. Add onion and taco seasoning to the meat and allow to cook for a few minutes.
  3. Once the onion had softened, add in the corn and beans.
  4. Stir well and set aside.
  5. Cut the sweet potato in half.
  6. Rub each half with oil.
  7. Place in the air fryer or on a baking sheet in the oven and roast till fork tender.
  8. Allow to cool, scoop out some of the flesh and mix with the meat filling.
  9. Fill it back into the potato skins, and top with grated cheese and sour cream. Enjoy!!

The meat was seasoned with my homemade taco seasoning blend.

Taco Seasoning

  1. Combine all seasonings together and store them in an airtight jar.
  2. Add seasoning to the meat while browning.
  3. Build your salad according to your usual/favorite taco toppings and enjoy!!
