Thai Green Chicken Curry
- 4 chicken thighs
- 1 tbsp reduced-sodium dark soy sauce
- 1 tbsp all-purpose flour
- 1 medium onion, finely chopped
- 2 tbsp green curry paste
- 3 tbsp garlic, finely chopped
- 1/2 tsp ground ginger
- 1 can coconut milk
- 100 ml milk
- 2 tbsp white sugar
- 1 tbsp reduced-sodium dark soy sauce
Salad ingredients:
- 1/4 head green cabbage, thinly sliced
- 1/2 head Romaine lettuce, thinly sliced
- 1/2 cucumber, diced
- A handful of chopped macadamia nuts
- 1 heaped tsp sesame seeds
Dressing:
- 1/8 cup white vinegar
- 1/8 cup neutral oil
- 1/16 cup soy sauce
- A pinch of ground ginger
- A pinch of chili powder or cayenne
- 1 tsp garlic, mashed into a paste
- 1/2 tsp sesame seeds, mashed into a paste
- 1 tsp white sugar
Instructions
Thai Green Chicken Curry
- Toss the chicken thighs in soy sauce, then coat them lightly with flour.
- Heat a little oil in a large skillet or pan.
- Brown the chicken well on both sides; this adds tons of flavor. Remove and set aside.
- Lower the heat to medium.
- Add the green curry paste to the same pan and fry for about 1 minute until it smells amazing.
- Add the chopped onion and cook for another 5 minutes until soft.
- Return the chicken to the pan.
- Add garlic, ginger, coconut milk, milk, sugar, and the second tablespoon of soy sauce. Stir gently, cover, and let it simmer for 20 minutes.
- The sauce will thicken, and your kitchen will smell incredible.
Quick Thai Slaw
- Toss all the slaw ingredients into a big bowl.
- Mix the dressing in a jar and shake it like crazy.
- Pour over the slaw right before serving for maximum crunch.
