Thai Green Chicken Curry

Salad ingredients:

  • 1/4 head green cabbage, thinly sliced
  • 1/2 head Romaine lettuce, thinly sliced
  • 1/2 cucumber, diced
  • A handful of chopped macadamia nuts
  • 1 heaped tsp sesame seeds

Instructions

Thai Green Chicken Curry

  1. Toss the chicken thighs in soy sauce, then coat them lightly with flour.
  2. Heat a little oil in a large skillet or pan.
  3. Brown the chicken well on both sides; this adds tons of flavor. Remove and set aside.
  4. Lower the heat to medium.
  5. Add the green curry paste to the same pan and fry for about 1 minute until it smells amazing.
  6. Add the chopped onion and cook for another 5 minutes until soft.
  7. Return the chicken to the pan.
  8. Add garlic, ginger, coconut milk, milk, sugar, and the second tablespoon of soy sauce. Stir gently, cover, and let it simmer for 20 minutes.
  9. The sauce will thicken, and your kitchen will smell incredible.

Quick Thai Slaw

  1. Toss all the slaw ingredients into a big bowl.
  2. Mix the dressing in a jar and shake it like crazy.
  3. Pour over the slaw right before serving for maximum crunch.
