- 1 can (540 g) black beans
- 1 can (398 g) tomato and onion mix
- 2 heaped teaspoons brown sugar
- 50-100 ml red wine
- 3/4 punnet baby spinach leaves
- Lamb chops or any chops of your choice
Instructions
- In a large pan, add black beans and the tomato and onion mix.
- Simmer for about 5 minutes.
- Stir in the brown sugar until dissolved.
- Pour in the red wine and mix well. Simmer until it reduces to your liking.
- Keep it juicy but not watery.
- Two minutes before finishing, add torn baby spinach leaves and let them wilt gently.
- Meanwhile, cook your chops in a pan until browned and done to your taste.
- Serve the chops topped with the rich black bean tomato sauce.
