- 2 handfuls of spring mix
- 1 container of cocktail tomatoes, halved
- 1 fresh pineapple, peeled and cubed
- 1 small can of peaches, drained and sliced
- 2 chicken fillets, grilled to your preference, cubed
- 1 handful of pecan nuts, coarsely crushed
- Optional: vinaigrette of your choice
Instructions
- Grab a large salad bowl and toss in 2 handfuls of spring mix.
- Add 1 container of cocktail tomatoes, halved, and 1 fresh pineapple, cubed. Mix gently.
- Drain 1 small can of peaches and slice them before adding to the bowl.
- Cook 2 chicken fillets on the grill (or stovetop) until golden and juicy, then cube them and drop them into the salad once cold.
- Sprinkle 1 handful of pecan nuts over everything for that satisfying crunch.
- Drizzle with your favorite vinaigrette if you like, then toss everything together lightly.
- Taste and adjust, maybe a little extra salt, a squeeze of lemon, or more nuts if youβre feeling fancy.
