Description

Fresh pineapple, sweet peaches, and savory grilled chicken make this Tropical Chicken Salad a bright and satisfying choice. Add it to your weekly menu for a quick, healthy meal.


Ingredients

Scale
  • 2 handfuls of spring mix
  • 1 container of cocktail tomatoes, halved
  • 1 fresh pineapple, peeled and cubed
  • 1 small can of peaches, drained and sliced
  • 2 chicken fillets, grilled to your preference, cubed
  • 1 handful of pecan nuts, coarsely crushed
  • Optional: vinaigrette of your choice

Instructions

  1. Grab a large salad bowl and toss in 2 handfuls of spring mix.
  2. Add 1 container of cocktail tomatoes, halved, and 1 fresh pineapple, cubed. Mix gently.
  3. Drain 1 small can of peaches and slice them before adding to the bowl.
  4. Cook 2 chicken fillets on the grill (or stovetop) until golden and juicy, then cube them and drop them into the salad once cold.
  5. Sprinkle 1 handful of pecan nuts over everything for that satisfying crunch.
  6. Drizzle with your favorite vinaigrette if you like, then toss everything together lightly.
  7. Taste and adjust, maybe a little extra salt, a squeeze of lemon, or more nuts if you’re feeling fancy.
