Ingredients

  • 200 g fresh blackberries
  • 250 g cream cheese
  • 125 g mascarpone cheese
  • 125 ml (1/2 cup) fresh cream
  • Zest of 1 lemon
  • 30 ml berry sugar
  • 200 g crumbed biscuits (keep them a bit chunky for texture)
  • 40 ml melted margarine
  • 30 ml shredded coconut

Instructions

  1. Start by puréeing the blackberries until smooth.
  2. In a large mixing bowl, combine the blackberry purée, cream cheese, mascarpone, fresh cream, lemon zest, and berry sugar.
  3. Use a hand mixer to whip everything together until it’s silky smooth.
  4. In another bowl, mix the crumbed biscuits, melted margarine, and coconut until evenly coated and slightly moist.
  5. Grab your serving dishes, you can go with small glass bowls for individual portions or a single larger dish for sharing.
  6. Start by spreading a layer of the biscuit mixture at the bottom.
  7. Add a layer of the creamy blackberry mix on top.
  8. Repeat the layers two more times, ending with the blackberry cheesecake mixture on top.
  9. Cover the dish with plastic wrap and let it chill in the fridge for at least two hours.
  10. Just before serving, garnish with fresh blackberries for that extra wow factor.
