These Vegan Melting Snowman Cake Pops are messy in the best way and honestly look even cuter when they’re a little uneven. They’re soft, chocolatey, and fun to decorate, especially if you’re making them with kids or just feeling festive in your kitchen late at night with melted chocolate everywhere.

- 1 1/2 cups all-purpose flour
- 3/4 cup sugar
- 1/2 tsp bicarbonate soda
- 1/2 tsp salt
- 1 Tbsp cocoa powder
- 3/4 cup sunflower oil
- 1/2 cup coconut milk
- 1 Tbsp vinegar
- 1 flax egg
Decorating
- Vegan white chocolate or vegan brown chocolate, melted
- Mini Oreo cookies
- Small candies for the eyes and nose
- Decorating icing for the mouth
- Square pretzels
Instructions
- Preheat your cake pop machine according to the manufacturer’s directions. Most machines heat pretty quickly, so I usually get the batter ready first, so I’m not rushing later.
- In a medium bowl, sift together the 1 1/2 cups all-purpose flour, 3/4 cup sugar, 1/2 tsp bicarbonate soda, 1/2 tsp salt, and 1 Tbsp cocoa powder.
- In another bowl, whisk together the 3/4 cup sunflower oil, 1/2 cup coconut milk, and 1 Tbsp vinegar. Let it sit for about 1 minute so it slightly thickens. Stir in the flax egg.
- Pour the wet ingredients into the dry ingredients and stir gently until combined.
- Don’t overmix it, or the cake pops can turn a bit dense. The batter should be smooth but still thick enough to spoon.
- Lightly grease the cake pop machine if needed, then fill each cavity about 3/4 full.
- If you overfill them, they puff out everywhere. Bake according to your machine’s directions, usually around 4 to 6 minutes, or until a toothpick comes out clean.
- Transfer the cake pop balls to a cooling rack, then refrigerate for at least 2 hours.
- Cold cake pops are much easier to dip and won’t fall apart in warm chocolate.
- Melt the vegan white chocolate or vegan brown chocolate in the microwave in 30-second bursts, stirring between each round. Don’t let it get too hot or super runny, as it’ll slide right off the cake pops instead of coating them properly.
- Using a toothpick or skewer, carefully dip each cold cake pop into the melted chocolate. Let the excess drip off for a few seconds.
- Place each coated cake pop onto a square pretzel, so it stays in place and gives that melted snowman look. Parchment paper works too, but the pretzel really helps stop rolling.
- While the chocolate is still slightly sticky, press on a mini Oreo cookie for the hat. Add small candies for the eyes and nose before the coating fully sets.
- Leave the cake pops to set completely. Overnight works best because the chocolate firms up nicely and the decorations stay put.
- Pipe on the mouths using decorating icing just before serving or once everything is fully firm.
