Description
Homemade Vegetable Cottage Pie with a cheesy topping. Just the right amount of cozy.

Pie Filling
- 500 g cooked mixed vegetables (fresh or frozen)
- Salt and pepper, to taste
- 1 batch white sauce (see below)
- 4 medium potatoes, cooked and mashed
- A pinch of grated nutmeg (optional)
White Sauce
- 2 tbsp margarine or butter
- 2 tbsps all-purpose flour
- 500 ml milk
- Salt and pepper, to taste
Cheesy Topping
- 1 cup all-purpose flour
- 1 tbsp margarine or butter
- 1 cup milk
- 1/2 cup grated cheese
- Salt and pepper, to taste
Instructions
White Sauce
- Melt the margarine in a pan.
- Stir in the flour until smooth, then whisk in the milk gradually.
- Simmer until thickened, season with salt and pepper.
Cheesy Topping
- Melt butter in a small saucepan.
- Whisk in the flour and milk until smooth.
- Stir in the cheese and season well. Set aside.
Pie Assembly
- Preheat oven to 180C / 350F. Grease a medium pie dish.
- Spread mixed vegetables evenly in the dish.
- Pour over the white sauce.
- Spread mashed potatoes over the top.
- Spoon over the cheesy topping and smooth it out.
- Grate a little nutmeg or paprika on top if you like.
- Bake for 30 minutes, or until golden and bubbling.
