Vegetable Cottage Pie with Cheesy Topping

Description

Homemade Vegetable Cottage Pie with a cheesy topping. Just the right amount of cozy.


Ingredients

Units Scale

Pie Filling

  • 500 g cooked mixed vegetables (fresh or frozen)
  • Salt and pepper, to taste
  • 1 batch white sauce (see below)
  • 4 medium potatoes, cooked and mashed
  • A pinch of grated nutmeg (optional)

White Sauce

  • 2 tbsp margarine or butter
  • 2 tbsps all-purpose flour
  • 500 ml milk
  • Salt and pepper, to taste

Cheesy Topping

  • 1 cup all-purpose flour
  • 1 tbsp margarine or butter
  • 1 cup milk
  • 1/2 cup grated cheese
  • Salt and pepper, to taste

Instructions

White Sauce

  1. Melt the margarine in a pan.
  2. Stir in the flour until smooth, then whisk in the milk gradually.
  3. Simmer until thickened, season with salt and pepper.

Cheesy Topping

  1. Melt butter in a small saucepan.
  2. Whisk in the flour and milk until smooth.
  3. Stir in the cheese and season well. Set aside.

Pie Assembly

  1. Preheat oven to 180C / 350F. Grease a medium pie dish.
  2. Spread mixed vegetables evenly in the dish.
  3. Pour over the white sauce.
  4. Spread mashed potatoes over the top.
  5. Spoon over the cheesy topping and smooth it out.
  6. Grate a little nutmeg or paprika on top if you like.
  7. Bake for 30 minutes, or until golden and bubbling.
