Vegetarian Butternut Fritters

Ingredients

  • 500 g pumpkin or butternut, (I use butternut) peeled and cut into chunks, boiled and mashed
  • 2 eggs (use plain yogurt in place of eggs to keep it vegetarian)
  • 150 g cake flour
  • 4 tbsp sugar
  • 1/2 t salt
  • 1 t ground cinnamon
  • 2 t baking powder
  • vegetable oil for frying.

Instructions

  1. Place mashed pumpkin in a large bowl, and add the flour, salt, ground cinnamon, sugar, and baking powder.
  2. Mix to a smooth batter.
  3. We like firmer batter, as you can shape them better.
  4. Heat the oil in a large saucepan over medium. Heat. When hot, carefully drop in a spoonful of the fritter mixture, taking care not to overcrowd the pan.
  5. Press them gently down.
  6. Fry until cooked through and golden, then drain on kitchen paper. Dust with cinnamon sugar and serve immediately.
  7. Note: too high a heat and your fritters will brown too quickly on the outside and stay undercooked inside.
  8. If the batter is too thick, add some milk (or egg if you use it) to make a thinner batter. 
  9. Enjoy your fritters!
