Crispy, golden, and vegetarian, your new favorite Vegetarian Butternut Fritters snack is here

Vegetarian Butternut Fritters

Vegetarian Butternut Fritters with a sugar and cinnamon coating is a delightful twist on classic fritters, blending the natural sweetness of roasted butternut squash with the warm, comforting flavors of sugar and cinnamon. These fritters are not only easy to make but also offer a healthy option for those craving a sweet treat.

Butternut squash is packed with nutrients like vitamins A and C, fiber, and antioxidants, making it a nourishing base for this recipe. The smooth texture of the squash helps create a soft, fluffy center in the fritters, while the outer layer will crisp up perfectly when fried. Once cooked, the fritters are dusted with a generous coating of cinnamon and sugar, enhancing their sweet and spiced profile.

These fritters make a wonderful dessert or snack for autumn, with the warm spices offering a comforting touch. They’re also incredibly versatile—serve them with a drizzle of maple syrup, a dollop of whipped cream, or even alongside a hot cup of tea for a cozy treat. Description

Looking for a new veggie dish to spice up your meal plan? Dive into our Vegetarian Butternut Fritters recipe and let us know what you think.

Ingredients

Units Scale
  • 500 g pumpkin or butternut, (I use butternut) peeled and cut into chunks, boiled and mashed
  • 2 eggs (use plain yogurt in place of eggs to keep it vegetarian)
  • 150 g cake flour
  • 4 tbsp sugar
  • 1/2 t salt
  • 1 t ground cinnamon
  • 2 t baking powder
  • vegetable oil for frying.

Instructions

  1. Place mashed pumpkin in a large bowl, and add the flour, salt, ground cinnamon, sugar, and baking powder.
  2. Mix to a smooth batter.
  3. We like firmer batter, as you can shape them better.
  4. Heat the oil in a large saucepan over medium. Heat. When hot, carefully drop in a spoonful of the fritter mixture, taking care not to overcrowd the pan.
  5. Press them gently down.
  6. Fry until cooked through and golden, then drain on kitchen paper. Dust with cinnamon sugar and serve immediately.
  7. Note: too high a heat and your fritters will brown too quickly on the outside and stay undercooked inside.
  8. If the batter is too thick, add some milk (or egg if you use it) to make a thinner batter.
  9. Enjoy your fritters!
