Ingredients
- 500 g pumpkin or butternut, (I use butternut) peeled and cut into chunks, boiled and mashed
- 2 eggs (use plain yogurt in place of eggs to keep it vegetarian)
- 150 g cake flour
- 4 tbsp sugar
- 1/2 t salt
- 1 t ground cinnamon
- 2 t baking powder
- vegetable oil for frying.
Instructions
- Place mashed pumpkin in a large bowl, and add the flour, salt, ground cinnamon, sugar, and baking powder.
- Mix to a smooth batter.
- We like firmer batter, as you can shape them better.
- Heat the oil in a large saucepan over medium. Heat. When hot, carefully drop in a spoonful of the fritter mixture, taking care not to overcrowd the pan.
- Press them gently down.
- Fry until cooked through and golden, then drain on kitchen paper. Dust with cinnamon sugar and serve immediately.
- Note: too high a heat and your fritters will brown too quickly on the outside and stay undercooked inside.
- If the batter is too thick, add some milk (or egg if you use it) to make a thinner batter.
- Enjoy your fritters!
