Description
Garlic butter + fresh veggies = weeknight magic.
This stir-fry has asparagus, peppers, mushrooms, and spinach all ready in just 15 minutes.
Ingredients

- Garlic butter (about 7 slices from a stick)
- 12 asparagus spears, cut into thirds
- 1/2 large onion, sliced and diced
- 1 large red pepper, quartered and sliced
- 1/2 punnet sliced mushrooms
- Large handful of baby spinach leaves
- 1/2-1 tsp store-bought minced garlic (adjust to taste)
- Dried basil, to taste
- Dried rosemary, to taste
Instructions
- Steam the asparagus until just tender but still firm. Set aside.
- Heat the garlic butter in a large skillet over medium heat.
- Add onion and red pepper. Stir-fry until slightly softened.
- Stir in the minced garlic. Halfway through cooking, add mushrooms and cook until almost done.
- Season with basil and rosemary. Stir well, but avoid overcooking.
- Add asparagus back into the skillet.
- In the last 30 seconds, toss in baby spinach and stir until just wilted.
- Serve hot.
