Quick Garlic Butter Veggie Stir-Fry with Asparagus

Description

Garlic butter + fresh veggies = weeknight magic.
This stir-fry has asparagus, peppers, mushrooms, and spinach all ready in just 15 minutes.


Ingredients

Scale
  • Garlic butter (about 7 slices from a stick)
  • 12 asparagus spears, cut into thirds
  • 1/2 large onion, sliced and diced
  • 1 large red pepper, quartered and sliced
  • 1/2 punnet sliced mushrooms
  • Large handful of baby spinach leaves
  • 1/2-1 tsp store-bought minced garlic (adjust to taste)
  • Dried basil, to taste
  • Dried rosemary, to taste

Instructions

  1. Steam the asparagus until just tender but still firm. Set aside.
  2. Heat the garlic butter in a large skillet over medium heat.
  3. Add onion and red pepper. Stir-fry until slightly softened.
  4. Stir in the minced garlic. Halfway through cooking, add mushrooms and cook until almost done.
  5. Season with basil and rosemary. Stir well, but avoid overcooking.
  6. Add asparagus back into the skillet.
  7. In the last 30 seconds, toss in baby spinach and stir until just wilted.
  8. Serve hot.
