Ingredients
Scale
Burger
- 1 beef burger patty of your choice
- 1 burger roll of your choice
- 1 tbsp mayonnaise
- Lettuce, as needed
Warm Squash Relish
- 1 tbsp butter
- 2 baby onions, peeled and sliced
- 1 baby gem squash, peeled and diced
- 1 slice butternut, peeled and cubed
- 2 tbsp mixed fresh peppers, diced
- 2 tbsp carrots, diced
- 2 tbsp spinach, chopped
- 1 tsp fresh coriander, chopped
- 1 tsp jeera seeds (cumin seeds)
- Salt and pepper, to taste
Tamarind Perinaise
- 2 tbsp mayonnaise
- 1 tbsp peri peri sauce
- 1 tbsp tamarind sauce
Instructions
- Cook 1 beef burger patty in a non-stick pan until browned and cooked through. For ground beef, cook and let the patty rest while you finish the relish.
- Melt 1 tbsp butter in a pot over medium heat. Add 2 sliced baby onions and 1 tsp jeera seeds (cumin seeds), then cook until the onions start to brown and the cumin becomes fragrant.
- Add 1 diced baby gem squash, 1 cubed slice of butternut and 2 tbsp diced carrots. Stir well, cover and cook until the squash, butternut, and carrots are tender. You shouldn’t need to add water, as the vegetables will release some moisture as they cook. Give it a stir now and then so nothing catches on the bottom.
- Once the vegetables are tender, season the warm squash relish with salt and pepper to taste. Stir in 2 tbsp mixed fresh diced peppers, 2 tbsp chopped spinach and 1 tsp chopped fresh coriander. Cook for another 1 to 2 minutes, just until the spinach wilts and the peppers soften slightly. You still want a little texture in the relish.
- For the Tamarind Perinaise, mix 2 tbsp mayonnaise, 1 tbsp peri peri sauce and 1 tbsp tamarind sauce in a small bowl. Give it a taste and adjust the peri peri or tamarind if you want more heat or tang.
- Cut 1 burger roll in half and spread 1 tbsp mayonnaise over the cut sides. Add lettuce, then place the warm beef patty on top.
