Description
This Warm Squash Relish Burger takes a good beef patty and gives it a proper flavour boost with sweet squash, peppers, spinach and a tangy tamarind Perinaise. Pile it all onto your favourite roll with crisp lettuce and mayonnaise, and you’ve got a burger that’s anything but ordinary
Ingredients
Burger
- 1 beef burger patty of your choice
- 1 burger roll of your choice
- 1 tbsp mayonnaise
- Lettuce, as needed
Warm Squash Relish
- 1 tbsp butter
- 2 baby onions, peeled and sliced
- 1 baby gem squash, peeled and diced
- 1 slice butternut, peeled and cubed
- 2 tbsp mixed fresh peppers, diced
- 2 tbsp carrots, diced
- 2 tbsp spinach, chopped
- 1 tsp fresh coriander, chopped
- 1 tsp jeera seeds (cumin seeds)
- Salt and pepper, to taste
Tamarind Perinaise
- 2 tbsp mayonnaise
- 1 tbsp peri peri sauce
- 1 tbsp tamarind sauce
Instructions
- Cook 1 beef burger patty in a non-stick pan until browned and cooked through. For ground beef, cook and let the patty rest while you finish the relish.
- Melt 1 tbsp butter in a pot over medium heat. Add 2 sliced baby onions and 1 tsp jeera seeds (cumin seeds), then cook until the onions start to brown and the cumin becomes fragrant.
- Add 1 diced baby gem squash, 1 cubed slice of butternut and 2 tbsp diced carrots. Stir well, cover and cook until the squash, butternut, and carrots are tender. You shouldn’t need to add water, as the vegetables will release some moisture as they cook. Give it a stir now and then so nothing catches on the bottom.
- Once the vegetables are tender, season the warm squash relish with salt and pepper to taste. Stir in 2 tbsp mixed fresh diced peppers, 2 tbsp chopped spinach and 1 tsp chopped fresh coriander. Cook for another 1 to 2 minutes, just until the spinach wilts and the peppers soften slightly. You still want a little texture in the relish.
- For the Tamarind Perinaise, mix 2 tbsp mayonnaise, 1 tbsp peri peri sauce and 1 tbsp tamarind sauce in a small bowl. Give it a taste and adjust the peri peri or tamarind if you want more heat or tang.
- Cut 1 burger roll in half and spread 1 tbsp mayonnaise over the cut sides. Add lettuce, then place the warm beef patty on top.

Additional Information and Tips
- Can I use a different squash? Yes. Baby gem squash can be replaced with extra butternut, pumpkin or another firm squash. Keep the pieces fairly small so everything cooks evenly.
- Does the squash relish need water? No. The vegetables release moisture as they cook, so additional water isn’t normally needed. Keep the heat moderate and stir occasionally to prevent sticking.
- How soft should the vegetables be? They should be tender but not mushy. Keeping a little texture makes the relish much better on the burger.
- Can I change the vegetables? Absolutely. Red onion can replace baby onions, parsley can replace coriander, and extra spinach or peppers can be added according to what’s available.
- Can I make the Perinaise milder? Yes. Reduce the peri peri sauce for less heat. For more heat, add a little extra peri peri sauce and taste as you go.
- Can I adjust the Tamarind Perinaise? Yes. More tamarind sauce will give you extra tang and sweetness, while more mayonnaise will mellow the sauce. Mix a little at a time until it tastes right to you.
- What type of burger roll should I use? Any soft burger roll works. Kitka rolls were used here, but brioche, potato rolls or regular hamburger buns are all good options.
- Can I prepare the relish ahead of time? Yes. The squash relish can be prepared ahead and refrigerated in an airtight container for up to 3 days. Reheat it gently before assembling the burger.
- How should leftovers be stored? Keep the cooked relish and Perinaise in separate airtight containers in the refrigerator. The assembled burger is best eaten fresh so the roll doesn’t become soggy.
- Can the relish be frozen? Yes, the cooked squash relish can be frozen separately for up to 2 months. Thaw it in the refrigerator and reheat gently, keeping in mind that the vegetables may be slightly softer after freezing.
- How should the beef patty be cooked? Cook the beef patty until browned and cooked through, reaching an internal temperature of 160⁰F (71⁰C). Let it rest for a few minutes before assembling the burger.
- Can I use a different protein? Yes. A chicken, turkey, lamb or plant-based patty can be used instead of beef. Adjust the cooking time and safe internal temperature according to the protein you choose.
- Can I make the burger spicier? Yes. Add more peri peri sauce to the Perinaise or include a little extra fresh pepper in the relish. Taste as you go so the heat doesn’t overpower the tamarind and vegetables.

Warm Squash Relish Burger gives a juicy beef patty a fresh twist with tender squash, butternut, peppers and spinach. The homemade Tamarind Perinaise adds just the right mix of tang and heat, while the soft roll brings everything together for a satisfying burger worth making for dinner.
