Whole Orange and Coconut Cake

Description

The Best Orange Coconut Cake and super delicious! I love the combination of citrusy and sweet flavors, and the texture would be amazing. It’s a unique and flavorful dessert that would be a hit at any gathering.


Ingredients

Units Scale
  • 1 whole orange, plus 1 extra
  • 200 g butter, chopped, at room temperature
  • 3 eggs, lightly whisked
  • 1 cup castor sugar
  • 1 1/4 cups self-raising flour
  • 1/2 cup desiccated coconut
  • 1 cup icing sugar

Instructions

  1. Preheat oven to 180°C/160°C fan forced.
  2. Grease a 20cm (base diameter) round cake pan.
  3. Line the base and sides with baking paper.
  4. Wash and dry the orange.
  5. Coarsely chop unpeeled orange.
  6. Process orange in a food processor until coarsely pureed.
  7. Add butter, egg, sugar, flour, and coconut.
  8. Process until combined (do not over-process).
  9. Spread mixture into prepared pan.
  10. Bake for 50 minutes or until a skewer inserted at the center comes out clean.
  11. Stand cake in pan for 5 minutes.
  12. Transfer to a wire rack to cool completely.
  13. Using a zester, zest the skin of the extra orange into long thin strips.
  14. Juice the orange; strain.
  15. Sift icing sugar into a bowl.
  16. Stir in enough juice to make a smooth icing.
  17. Drizzle icing over the cake.
  18. Sprinkle with zest.
  19. Allow setting.
  20. Serve.
