Description

Light and fluffy with lots ofΒ zucchiniΒ and freshΒ corn, these frittersΒ are a family favorite and served with chunky avocado as a great green start to any day.


Ingredients

Units Scale
  • 1 Large Zucchini (grated)
  • 1 cup Corn (thawed)
  • 1/2 cup Flour
  • 1 tsp. Baking Powder
  • 1 tsp. Garlic Powder
  • 1/2 tsp. Paprika
  • 1 tsp. Dried Thyme
  • Salt & Pepper to taste
  • Chopped Fresh Mint
  • Chopped Fresh Coriander
  • 50g Feta (crumbled/chunky)
  • 1 cup Milk/Water (approx.)

Instructions

  1. Place zucchini in a dish towel and squeeze out as much liquid as possible.
  2. Place in a mixing bowl with the corn and all the dry ingredients, and toss well.
  3. Add in enough milk to form a thick batter then gently stir in the feta.
  4. Heat a large pan, add enough oil to coat the bottom of the pan, spoon the batter into the hot oil and pat down gently to flatten.
  5. Cook until browned on both sides.
  6. Enjoy!!
