Zucchini Waffles with Shrimp

Instructions

  1. Use a food processor to chop the zucchini and onion into small, grainy pieces.
  2. Afterward, squeeze out as much liquid as possible using a towel or paper towel.
  3. Preheat your waffle maker/mini dash and grease it with butter.
  4. In a bowl, whisk the egg with some salt and black pepper.
  5. Add the zucchini mixture, dill, and chopped fresh mozzarella cheese. Mix everything well.
  6. Spoon a small amount of the batter onto the greased waffle maker.
  7. Close it and cook for about 5 minutes or until the steam stops.
  8. Turn off the waffle maker and let the waffle cool for 2–3 minutes before removing it.

  11. Serve the waffles on a plate with shrimp and cream cheese.
  12. Sprinkle with chopped spinach leaves on top and enjoy!
