A healthy and crunchy make-ahead Broccoli Salad. Well, what a hit this was, I had all the dinner guests asking for the recipe.

Ingredients:

1 head broccoli
1 cup mayonnaise
½ cup sugar
3 Tbls red wine vinegar
½ red onion

Toppings:

1 packet thin uncooked  noodles (I use 2-minute noodles)
½ cup raisins
1 cup raw sunflower seeds shelled not roasted or salted
1 cup raw cashews

Method:

Prepare the broccoli by cutting off the stems and set aside (use for another dish).
Only use the florets for this salad and chop it into small bite-size pieces
Place broccoli into a large bowl.
In a medium bowl, whisk mayonnaise, sugar, vinegar, and finely minced onion.

Add raisins, crumbled noodles, sunflower seeds, and cashews.
Toss to combine.

You can either pour dressing over broccoli, just prior to serving or set it aside and your guests can add it themselves.
