These Kassler Chops are meant for the Air Fryer but I did them on my grill pan instead, this is my pan-grilled take on Air Fryer Glazed Kassler Chops.
I followed the recipe but after making the sauce I put the chops in the sauce for 15 minutes and then fried in a grill pan for about 6 minutes on each side. Poured the sauce over and heated it through in the pan. Serve with sides of choice.
What is Kassler Meat?
You may wonder what on earth is Kassler Meat.
Kassler or Kasseler in German cuisine is the name given to a salted (cured) and slightly smoked cut of pork similar to gammon. It can be either hot or cold smoked. Pork necks and loins are the most often used cuts although ribs, shoulders, and bellies can also be used.

Air Fryer Glazed Kassler Chops
- Prep Time: 10 minutes
- Cook Time: 20 minutes
- Total Time: 30 minutes
- Yield: 4 portions 1x
Ingredients
- 4 Kassler Chops
- Glaze
- 2 tablespoons brown sugar
- 2 tablespoons honey
- 1 1/2 teaspoons Wholegrain Mustard (or Dijon)
- 3/4 cup Orange Juice
Instructions
- Preheat the air fryer to 180°C / 350°F.
- Spray lightly with Olive Oil.
- Combine glaze ingredients, brown sugar, honey, mustard, and orange juice.
- Microwave until sugar dissolves.
- Place the Kassler chops in the air fryer.
- Cook for 5 minutes.
- Flip over and cook for another 5 minutes.
- Pour glaze over and cook for another 5 – 10 minutes to reduce the sauce
slightly.
