Substitute suggestions

Description

These Apple Cinnamon Griddle Cakes are soft, lightly sweet, and packed with fresh grated Granny Smith apple and warm cinnamon. They’re quick to mix up for breakfast or a lazy weekend treat, and a drizzle of syrup on top makes them just right.


Ingredients

  • 1 cup Self-Raising flour
  • 1/4 cup sugar
  • 2 large eggs
  • 1/2 to 1 cup milk, added gradually
  • 1 tsp vanilla essence
  • 1 tbsp melted butter, plus extra for cooking
  • 1 tsp cinnamon powder
  • 1 Granny Smith apple, peeled and freshly grated
  • Syrup of your choice, for serving

Instructions

  1. In a large mixing bowl, whisk 1 cup Self-Raising flour, 1/4 cup sugar, 2 large eggs, 1 tsp vanilla essence, and 1 tsp cinnamon powder together.
  2. Gradually add 1/2 cup milk, mixing as you go, until you have a thick, smooth batter.
  3. Add a little more milk, up to the full 1 cup, only if needed. The batter should be thick enough to scoop or spoon into the frying pan without spreading too quickly.
  4. Stir in 1 Granny Smith apple, peeled and freshly grated, and 1 tbsp melted butter. Give it a good mix, but don’t overwork the batter.
  5. Heat a non-stick frying pan over medium heat and add a small amount of extra butter.
  6. Drop spoonfuls of batter into the pan, making them as big or small as you like. Medium-sized ones are easy to flip.
  7. Cook until bubbles appear on the surface and the edges look set, about 2 to 3 minutes.
  8. Flip carefully and cook the other side until puffed, cooked through, and lightly browned.
  9. Repeat with the remaining batter, adding a little more butter to the pan as needed.
  10. Serve the Griddle Cakes warm with your favourite syrup.
