Baileys Chocolate Crunch Balls

Description

These little chocolate balls work well for gifting because they hold their shape beautifully once chilled. The flavour settles and deepens after a day in the fridge, which makes them ideal for making ahead.


Ingredients

  • 1 cup semi-sweet chocolate morsels
  • 3 tbsp corn syrup
  • 1/2 cup Baileys
  • 2 1/2 cups vanilla wafer crumbs
  • 1/2 cup icing sugar
  • 1 cup mixed nuts, finely chopped
  • Berry sugar, for coating (or even coloured sanding sugar or regular granulated sugar)

Instructions

  1. Crush the vanilla wafers into fine crumbs using a food processor or place them in a sealed bag and crush them with a rolling pin.
  2. A few slightly bigger crumbs are perfectly fine and actually give the balls a bit more texture.
  3. In a large bowl, mix the 2 1/2 cups vanilla wafer crumbs, 1/2 cup icing sugar, and 1 cup finely chopped mixed nuts until evenly combined.
  4. If the nuts are chopped too roughly, the balls may crack while rolling. Finely chopped nuts blend better and hold together more easily.
  5. Add the 1 cup semi-sweet chocolate morsels to a microwave-safe glass bowl.
  6. Microwave in 30-second bursts, stirring each time, until smooth and melted. Take your time, or the chocolate can seize up.
  7. Stir the 3 tbsp corn syrup and 1/2 cup Baileys (do not be tempted to add more, as it will make it difficult to roll the balls) into the melted chocolate until smooth and glossy.
  8. Pour the chocolate mixture over the crumb mixture and stir well until everything is fully coated.
  9. The mixture should feel soft but easy to scoop.
  10. Cover the bowl and chill the mixture for 30 minutes, as it will help to form the balls.
  11. Use a 12.5 ml measuring spoon or small cookie scoop to portion the mixture into balls. Roll lightly between your hands.
  12. Place berry sugar into a large bowl and roll each ball in the sugar until well coated.
  13. Store the balls in a covered container for a couple of days before serving if you can wait that long. The flavour actually gets better as they sit.
