Description
These little chocolate balls work well for gifting because they hold their shape beautifully once chilled. The flavour settles and deepens after a day in the fridge, which makes them ideal for making ahead.
Ingredients
- 1 cup semi-sweet chocolate morsels
- 3 tbsp corn syrup
- 1/2 cup Baileys
- 2 1/2 cups vanilla wafer crumbs
- 1/2 cup icing sugar
- 1 cup mixed nuts, finely chopped
- Berry sugar, for coating (or even coloured sanding sugar or regular granulated sugar)
Instructions
- Crush the vanilla wafers into fine crumbs using a food processor or place them in a sealed bag and crush them with a rolling pin.
- A few slightly bigger crumbs are perfectly fine and actually give the balls a bit more texture.
- In a large bowl, mix the 2 1/2 cups vanilla wafer crumbs, 1/2 cup icing sugar, and 1 cup finely chopped mixed nuts until evenly combined.
- If the nuts are chopped too roughly, the balls may crack while rolling. Finely chopped nuts blend better and hold together more easily.
- Add the 1 cup semi-sweet chocolate morsels to a microwave-safe glass bowl.
- Microwave in 30-second bursts, stirring each time, until smooth and melted. Take your time, or the chocolate can seize up.
- Stir the 3 tbsp corn syrup and 1/2 cup Baileys (do not be tempted to add more, as it will make it difficult to roll the balls) into the melted chocolate until smooth and glossy.
- Pour the chocolate mixture over the crumb mixture and stir well until everything is fully coated.
- The mixture should feel soft but easy to scoop.
- Cover the bowl and chill the mixture for 30 minutes, as it will help to form the balls.
- Use a 12.5 ml measuring spoon or small cookie scoop to portion the mixture into balls. Roll lightly between your hands.
- Place berry sugar into a large bowl and roll each ball in the sugar until well coated.
- Store the balls in a covered container for a couple of days before serving if you can wait that long. The flavour actually gets better as they sit.
