Ingredients
- 1 cup whole wheat flour
- 25 ml chia seeds (about 2 Tbsp)
- 1 Tbsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup Demerara brown sugar (or regular brown sugar)
- 1 tsp cinnamon
- 1 cup mashed ripe banana (about 2 medium bananas)
- 1/4 cup unsweetened applesauce
- 1 large egg
- 1 tsp vanilla extract
- Optional Add-ins: 1/4 cup chopped walnuts, pecans, or chocolate chips
Instructions
- Preheat oven to 350°F (175°C).
- Line a muffin tin with paper liners.
- In a large bowl, whisk flour, chia seeds, baking powder, baking soda, salt, sugar, and cinnamon.
- In another bowl, mash bananas.
- Stir in applesauce, egg, and vanilla.
- Add wet ingredients to dry, mixing gently until just combined. Don’t overmix.
- Divide batter into 10–12 muffin cups.
- Bake 18–22 minutes (depending on your oven) until a toothpick comes out clean.
- Cool slightly before serving.
Storage: Keep in an airtight container for 3 days or freeze up to 2 months.
