  • Can this be frozen? Yes. Once completely cooled, place the cooked flapjacks in a freezer-safe container with baking paper between the layers. Freeze for up to 1 month for the best texture. Thaw in the fridge overnight or reheat gently in a frying pan or microwave.
  • How long can this be stored and how? For the best taste and texture, store cooled flapjacks in an airtight container in the fridge for up to 2 days. Reheat gently before serving. The banana can darken slightly over time, but that’s normal.
  • What if my banana is very large? If your banana is especially large and very wet, the mixture may need a little extra oats. Start with 1 tsp extra oats, mix and wait a minute before deciding whether it needs more.
  • Can I make one large flapjack? You can, but I don’t recommend it. The mixture is soft, and a large flapjack is more likely to break when you turn it. Two or three smaller ones are much easier to handle.

Substitute suggestion

  • Can I substitute the oats? Yes. Quick-cooking oats can be used, though the texture will be a little softer. I wouldn’t recommend replacing the oats with oat flour in the same quantity because it may change the consistency of the mixture.
  • Can I substitute the coconut? You can leave out the fine coconut if needed, but the mixture will be softer and less firm. Add a little extra oats, about 1 to 2 tsp, to help compensate.
  • Can I use regular flour? Yes. You can substitute 1 tsp regular all-purpose flour for the 1 tsp self-raising flour. The recipe only uses a small amount to help bind the mixture.
  • Can I use a different oil? Absolutely. Coconut oil or olive oil both work well. A neutral-tasting cooking oil can also be used.
  • Can I change the spices? Of course. Cinnamon and nutmeg are lovely with banana, but you can use just cinnamon if you prefer. A tiny pinch of mixed spice would also work.

Description

These Banana Coconut Oat Breakfast Bites are a quick little breakfast made with a ripe banana, oats and coconut, then cooked until lightly golden. They’re soft in the middle, gently spiced with cinnamon and nutmeg, and lovely served warm with fresh lemon, honey and a sprinkle of coconut.

  1. Add 1 large peeled and mashed banana, 1/4 cup oats, 1/4 cup fine coconut, 1 tsp self-raising flour, cinnamon to taste, and nutmeg to taste to a bowl.
  2. Mix everything until you have a thick, sticky mixture.
  3. Let it stand for about 2 to 3 minutes so the oats can soak up a little moisture. If the mixture feels too loose to hold its shape, add another 1 tsp oats and give it a minute.
  4. Heat a non-stick frying pan over medium-low heat.
  5. Add a small amount of coconut oil or olive oil, just enough to lightly coat the pan. You don’t need much.
  6. Spoon the mixture into the pan and gently shape it into 2 or 3 small flapjacks.
  7. Keep them fairly small because the mixture is soft and can be tricky to flip when made too large.
  8. Cook for about 3 to 5 minutes on the first side, until the underside is set and lightly browned.
  9. Use a thin spatula to turn each flapjack.
  10. Cook for another 2 to 4 minutes, lowering the heat if they’re browning too quickly. The centre should feel set but still soft.
  11. Transfer the bites to a plate and serve warm with fresh lemon juice or lemon wedges, honey to taste and extra fine coconut.
  12. A little squeeze of lemon really wakes up the banana and coconut, so don’t skip it if you like that sweet and tangy contrast
