What is Banoffee Cake
It’s gorgeous layers of banana cake, caramel, and whipped cream – perfect to use up old bananas and great for birthdays and teatime treats.
Banoffee pie
Banoffee pie is an English dessert pie made from bananas, cream, and a thick caramel sauce (made from boiled condensed milk, or dulce de leche), combined either on a buttery biscuit base or one made from crumbled biscuits and butter. Some versions of the recipe also include chocolate, coffee, or both.
Ingredients
Mash 1½ banana
Stir in 5ml baking soda and
125 ml plain yogurt
Whip 2 eggs and 250 ml light brown sugar until pale and fluffy
Add 5ml vanilla essence and
125ml oil and mix
Sift 1½ cups Self-raising flour and
5ml baking powder and fold into mixture
Lastly, add the mashed banana and yogurt mixture and blend thoroughly but gently
Pour mixture into a greased lined baking dish (25cm x 36cm)
Bake at 180C for 30 min or until a skewer inserted comes out clean
To decorate whip 250 ml fresh cream with 1½ tablespoon icing sugar
Spread caramel over cooled cake and top with fresh cream
Pipe caramel over the fresh cream.
