Battered Hake Pickled Fish

Battered Hake Pickled Fish

Ingredients
1kg hake fillets with skin on
3 large onions sliced in rings
Ina Paarman Fish Spice and Lemon and Pepper seasoning
Fisherman’s Spice seasoning
Robertson’s Peri Peri spice
Less than 750 ml White Spirit Vinegar
125 ml water and heaped Maizena/Cornflour (make a paste)
3 Bay leaves
5 Peppercorns

Hake in batter:
Fish Batter
Preparation time: 15 minutes or less
Want crispy, golden deep-fried fish? Not too greasy, but just right?
This is the easiest recipe to achieve this!
Ingredients
1 cup flour
1 teaspoon baking powder
½ teaspoon salt
1 cup Soda water
1 tablespoon lemon juice

Method

Mix flour, baking powder, and salt.
Add Soda water slowly and beat until the batter is smooth. Before dipping fish in batter, coat it with spiced cake flour
Dip the fish, into the batter, allowing the excess to drip off.
Deep-fry until golden brown. Drain on a paper towel or strainer.
Add sliced onions, bay leaves, peppercorns with vinegar and water.
Add 1 teaspoon Suhana mild chili powder
1 teaspoon turmeric
1 teaspoon Crayfish masala (avail at OSMAN, STORE)
1 teaspoon Mother-in-spice
sugar and Maizena paste.
Boil until onions are transparent.
Put battered fish in a glass dish with a lid and pour curry sauce over the fish.
