This Beetroot Butter such a pretty color is a delicious spread on bread, or biscuit, or Little Gem lettuce.
Loaded with good things and let’s not forget its ability to transform a white tablecloth.

Ingredients:
- 2 cups chopped cooked beetroot
- 1 large and ripe avocado
- 10ml apple cider vinegar
- salt to own taste.
Method
In a blender, food processor, or with a hand-held Whizzer, purée beetroot with the apple cider vinegar.
When done, add chopped avocado and blend well.
Season.
Place in a white dish, anything else will just not do!
The beautiful pink glossiness will seduce you.
Now sit down in a quiet spot and relish this delicious combination.
Keeps well in the refrigerator.
