This Beetroot Butter such a pretty color is a delicious spread on bread, or biscuit, or Little Gem lettuce.

Ingredients:
2 cups chopped cooked beetroot
1 large and ripe avocado
10ml apple cider vinegar
salt to own taste.
Method:
In a blender, food processor or with hand-held whizzer, purée beetroot with the apple cider vinegar.
When done, add chopped avocado and blend well.
Season.
Place in a white dish, anything else will just not do!
The beautiful pink glossiness will seduce you.
Now sit down in a quiet spot and relish this delicious combination.
Keeps well in the refrigerator.
