Ingredients
- ½ packet tennis biscuits, crushed
- 80 g melted butter
- 2 x 250 g smooth creamed cottage cheese
- 2 eggs
- 30ml cake flour
- 20 ml custard powder
- 1 Large can of Dessert cream
- 30 ml of lemon juice
- 125 ml of sugar
Method
- Preheat oven to 180 deg (Moderate)
- Mix crumbled biscuits with melted butter
- Press in a greased loose-bottomed cake pan
- Mix cottage cheese, eggs, flour, custard powder, and sugar together.
- Blend well with a hand beater at a slow speed
- Add the dessert cream as well as the lemon juice and mix well
- Bake for 30 minutes, then reduce heat to 150 deg and bake 4 another 30 minutes
- Switch off the oven and allow the cheesecake to cool in the oven
- When cool chill well in the fridge.
Spread with caramel treat as a topping.
