Craving a veggie dish that doesn’t feel like a chore? Try Bok Choy with Mushrooms


Ingredients

Scale
  • 1 medium onion
  • 1 can of sliced mushrooms
  • 6 to 8 baby Bok Choy
  • Basil
  • Thyme
  • Rosemary
  • Parsley
  • Salt
  • Freshly ground black pepper
  • Virgin olive oil

Instructions

  1. Slice the onion into thick pieces, then cut them into quarters.
  2. Heat a splash of olive oil in a big pan.
  3. Add the onions and canned mushrooms.
  4. Cook until they’re just how you like them, soft or slightly golden.
  5. Wash the Bok Choy, pull the leaves apart, and chop into bite-sized pieces.
  6. Toss them into the pan.
  7. Season with basil, thyme, rosemary, parsley, and salt, however much you like.
  8. Let it all cook until the Bok Choy softens and wilts.
  9. Finish with some freshly ground black pepper, give it a quick stir, and serve it hot.
