Ingredients
Bread Pudding
- 1 loaf (16 slices) white bread, crusts removed
- 500ml full cream milk
- 2 tsp sugar (add more if you like it sweeter)
- 8 eggs
- 3 cinnamon sticks
- 2 tsp vanilla essence
- Fine cinnamon for sprinkling
- 3 small knobs of butter
Homemade Custard
- 3 tbsp custard powder
- 3 tbsp sugar
- 500ml milk
Instructions
Bread Pudding
- Preheat oven to 180°C (350°F).
- Lightly grease a baking dish.
- Tear the bread into pieces and place them in the dish.
- In a bowl, whisk together eggs, milk, sugar, and vanilla until the sugar dissolves.
- Pour the mixture over the bread, pressing down gently so all the bread soaks it up.
- Sprinkle fine cinnamon on top, then place the cinnamon sticks and butter on the surface.
- Bake for 30–40 minutes, or until the pudding is firm in the center.
Homemade Custard
- Heat 440ml of the milk in a saucepan until it starts to simmer.
- In a small bowl, mix the remaining 60ml milk with custard powder and sugar until smooth.
- Once the milk in the pan is hot, stir in the custard mixture.
- Keep stirring until it thickens, then simmer for 2 minutes.
- Serve hot over the bread pudding.
