  1. Preheat oven to 350°F (175°C).
  2. Line a muffin tin with 14 muffin cases.
  3. In a large mixing bowl, beat sugar, oil, and eggs with a hand mixer until smooth and creamy.
  4. Add buttermilk, flour, wheat bran, salt, baking soda, Weetabix, and pistachios. Mix until just combined.
  5. Divide the batter evenly into muffin cases (about ¼ cup each).
  6. Sprinkle slivered almonds on top if using.
  7. Bake for 25 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool slightly before serving.
