30 Sep Caashifa's Apple Crumble
The ideal sweet indulgence without the guilt. It’s Gluten-free, grain-free, wheat-free and sugar-free
8 apples peeled and cut into chunks
1/4 cup sukrin gold or sweetener of choice to taste
1 tsp pumpkin spice (optional)
1 tsp ground cinnamon
1 tsp ground ginger
1/2 tsp ground nutmeg
Juice of 2 large lemons
1/4 cup desiccated coconut
1 cup almonds
1/4 cup coconut flour
1/2 cup macadamia flour or flour of choice
1 cup gluten-free oats or add more coconut flour
1/4 cup sukrin gold or sweetener of choice
1 tsp cinnamon
1/4 tsp nutmeg
1/2 cup butter
Combine the apples, sweetener and spices.
Mix till well blended.
Pour over the lemon juice and stir through.
Pour mixture into a greased baking dish (grease it with butter for an added great taste).
For the topping, combine the almonds and oats in a food processor.
Pulse till the nuts are roughly chopped.
Combine with the coconut, flour and spices.
Rub in the butter until crumbly.
Sprinkle over the apple mixture.
Bake at 180C for 45-50 minutes until the apple is tender and the crumble golden brown.
Serve warm with whipped cream or ice-cream.
This makes a very large serving size which I portioned in 2.
